
- 2/3 cup dried cranberries,
- 1 cup desiccated coconut,
- plus 2 tablespoons to roll,
- 1 cup almond meal,
- 2 tablespoons maple syrup,
- 1 ½ teaspoon lime rind,
- 1 tablespoon lime juice
Step 1. Process cranberries until finely chopped.
Step 2. Add remaining ingredients and process, using the pulse button, until mixture comes together
Step 3. Roll into 12 balls. Roll balls in extra coconut to coat
